Smoked Honey Glazed Pork Tenderloin

Pork tenderloin is one of the fastest, leanest cuts you can put in an oven, and it takes a glaze better than almost anything else. The key is a two-stage approach: sear it hard in a screaming-hot pan to build the crust, then finish in the oven so the center stays tender and the glaze caramelizes without burning. TGCS Co Smoked Honey Mustard is basically built for this. The honey gives you that sticky, lacquered exterior and the mustard and smoke do the work your spice cabinet usually has to do. You'll get a slight char on the outside, juicy pink on the inside, and the whole thing comes off in under 30 minutes. Serves 4.

What you need

Food:

2 pork tenderloins, approx. 500g each (tenderloins at 450 to 600g each are ideal. Anything smaller will overcook before the outside is done. Pat them completely dry before searing or they'll steam instead of crust.)

4 tbsp TGCS Co Smoked Honey Mustard, divided (3 tbsp for the glaze, 1 tbsp to season before searing. More glaze layers = more lacquer. Don't skip the pre-sear coat.)

1 tbsp neutral oil with a high smoke point (avocado or grapeseed. Not olive oil here, it'll smoke aggressively and taste bitter at sear temps.)

1 tsp kosher salt

1/2 tsp black pepper, freshly cracked

1 tsp garlic powder

1 tbsp apple cider vinegar (brightens the glaze so it doesn't go cloying)

1 tbsp butter (for basting in the oven, adds shine and richness)

Fresh thyme, a few sprigs (optional, but the wood-smoke note in the mustard loves it)

Equipment:

Oven-safe cast iron skillet or heavy stainless pan (this is the right tool here. A non-stick pan won't take the heat you need for a proper sear and can't go into a 425 F oven.)

Instant-read thermometer (non-negotiable. Pork tenderloin goes from perfect to dry in under 2 minutes. Thermometer is how you win.)

How to cook it

  1. Preheat your oven to 425 F and let it fully come to temp before you start the sear. Pull the tenderloins out of the fridge 15 to 20 minutes before cooking so they're not ice-cold in the center. (Cold meat hitting a hot pan drops the pan temp and stalls your crust.)
  2. Pat the tenderloins completely dry with paper towel. Season all over with salt, pepper, and garlic powder. Rub 1 tbsp of the Smoked Honey Mustard evenly across both tenderloins. It's a thin coat, more of a seasoning layer than a glaze at this stage.
  3. Heat your cast iron over high heat until it's genuinely hot, 2 to 3 minutes on a gas burner, closer to 4 on electric. Add the oil. When the oil starts to shimmer and just begins to smoke, you're ready. (If it's not smoking at all, your pan isn't hot enough and you won't get a crust.)
  4. Lay the tenderloins in the pan with space between them. DO NOT MOVE THEM for the first 2 minutes. Let the crust build. Sear 2 minutes per side, rotating to hit all four sides, about 8 minutes total. The outside should look deep golden-brown and smell like caramel.
  5. While the tenderloins sear, mix the remaining 3 tbsp Smoked Honey Mustard with the apple cider vinegar in a small bowl. This is your finishing glaze.
  6. Once the tenderloins are seared on all sides, brush them generously with the glaze. Drop the butter into the pan and let it melt around the base of the meat. Add the thyme sprigs if using.
  7. Transfer the whole pan into the 425 F oven. Roast 10 to 14 minutes, brushing with any glaze that pools in the pan halfway through. The tenderloins are done when an instant-read thermometer reads 145 F in the thickest part. (145 F is the USDA safe temp for pork and gives you a blush-pink center. 155 F is more well-done. Pull at 142 F if you want to account for carryover rest.)
  8. Pull the pan from the oven and let the tenderloins rest on the cutting board for 5 minutes. Resting is not optional, cut too early and the juices run out onto the board instead of staying in the meat.
  9. Slice on a slight diagonal, about 3/4 inch thick. Fan the slices on a plate or board, spoon any pan juices over the top, and finish with fresh thyme leaves if you have them.
